It all started with the Brazo de Reina!
This popular Chilean roulade sponge is found in Panaderias throught this Latin American country. Translated to 'Queen's Arm', it was was Alejandro's yearning for the flavours of home and a translated traditional recipe from a family cookbook that prompted Natalia to reinvent this chilean classic.
THE REINVENTION
The 'Queen's Arm' is a soft vanilla sponge roll with a dulce de leche filling. The sponge is also infused with authentic Chilean 'Pisco'.
The addition of Pisco was based on a recommendation by Alejandro. who told Natalia that this was a traditional way of creating the Chilean classic roulade - although later, Natalia realized that this was not a 'tradtional' technique but merely an excuse for Alejandro to consume more Pisco! The subtle muscat undertones of the Pisco are a proven hit - and who are we to turn down Pisco!
